    Cook rice according to package directions.

    Dice chicken thighs into 1-inch pieces. Slice bell pepper and onion into thin strips.

    In a bowl, whisk together pineapple juice, soy sauce, ketchup, brown sugar, garlic, and ginger.

    Heat olive oil in a pan over medium-high heat. Add chicken and cook until browned, about 5 minutes.
